Friday night Nina and I found the time to finally have a chat and swap the latest gossip. It was a very hot evening and we sat outside on her balcony and savored the calm, cloudless and starry night.
After her kids were brought to bed we had a late dinner. I bet it wasn’t late for her, because she is a fulltime mom with 2 of the most adorable girls I’ve ever seen, so her alone time begins around 9p.m.
She came up with her rocket-noodle-sun dried tomato-pine nuts-salad, which is LEGENDARY! All of our friends are craving for this dish.It’s the perfect summer feast. Light, fresh, fruity from the sun-dried tomatoes and with lots of garlic or spring onions and to top it off she always spreads prosciutto di parma over it.
She makes that salad for years now and I never found the time to do it myself. But 2 weeks ago I gave it a go.My one is not the orginal, because who can beat her in years of making this heaven sent meal.
So here’s the recipe:
- Noodles of your favor
- 1 packet of rocket
- 1 glass of sun-dried tomatoes
- 1 packet of pine nuts
- A couple of spring onions
- Garlic to your favor
- Salt and pepper
- Prosciutto di Parma
Cook the noodles al dente, strain them and let them rest.
Meanwhile chop up the onions and the garlic.Get on with the oily mess and cut the sund dried tomatoes in little pieces, but set the oil aside, you will need it later.
When the noodles are lukewarm, mix all the ingridients together. I always try not to make a mess, but it’s impossible or I always choose the wrong sized dish.
While stirring you can add half of the oil from the tomatoes and season with salt and pepper.
Put it on a plate and serve it with a glass of chilled white wine.
